Ingredients
- 1 lb of Shrimp
- Char Crust® Jamaican Jerk
- ½ cup pickled red onions or raw
- ½ cup almonds
- 1 avocado, sliced
- 1 orange, chopped
- 2 cups arugula
- 2 cups butter lettuce
- Feta or goat cheese
Instructions
- Coat shrimp with Char Crust and drizzle with olive oil.
- Heat grill or indoor grill to high heat.
- Grill shrimp for 4-6 minutes, until internal temperature reaches 145 degrees. Remove from the grill and let cool for 5 minutes.
- Lay out lettuces, almonds, orange segments, red onions and cheese (if using) on a platter.
- Toss with Citrus Vinaigrette (store-bought or follow recipe below)
Citrus Vinaigrette
Blend together:
- ¾ cup of olive oil
- ¼ cup white wine or apple cider vinegar
- 3 Tablespoons of orange juice
- 3 tablespoons of lemon juice
- 1 ½ tsp of dijon mustard
- 1 garlic clove minced
- ¼ tsp of salt
- ⅛ tsp of pepper
