Jamaican Jerk Shrimp Citrus Salad

Ingredients

  • 1 lb of Shrimp
  • Char Crust® Jamaican Jerk
  • ½ cup pickled red onions or raw
  • ½ cup almonds
  • 1 avocado, sliced
  • 1 orange, chopped
  • 2 cups arugula
  • 2 cups butter lettuce 
  • Feta or goat cheese

Instructions

  1. Coat shrimp with Char Crust and drizzle with olive oil.
  2. Heat grill or indoor grill to high heat.
  3. Grill shrimp for 4-6 minutes, until internal temperature reaches 145 degrees. Remove from the grill and let cool for 5 minutes.
  4. Lay out lettuces, almonds, orange segments, red onions and cheese (if using) on a platter.
  5. Toss with Citrus Vinaigrette (store-bought or follow recipe below)

Citrus Vinaigrette

Blend together:

  • ¾ cup of olive oil
  • ¼ cup white wine or apple cider vinegar  
  • 3 Tablespoons of orange juice
  • 3 tablespoons of lemon juice
  • 1 ½ tsp of dijon mustard
  • 1 garlic clove minced
  • ¼ tsp of salt
  • ⅛ tsp of pepper
